 La Cave: creusée dans la roche mère calcaire, notre cave se compose de cuves acier, de foudres de chêne pour l’élevage des rouges et de barriques pour notre vin doux farandole et notre Chardonnay barrique. Les techniques de vinification sont modernes toutefois dans le respect à la fois de la tradition et du cépage. Un pressurage doux, un contrôle strict de la température durant la fermentation, un suivi méthodique ainsi qu’une hygiène rigoureuse, permettent d’offrir des vins de qualité reconnue. Nous mettons tout notre coeur et notre savoir-faire dans l’élaboration de nos crus. Die Reben: Die in den Gemeinden Cressier und Landeron auf einer Höhe von 430 Metern wachsenden Reben der Domäne breiten sich über sechs Hektar aus. Dazu kommen drei Hektar, die von Winzern der Gegend kultiviert werden. Davon entfallen 50 % auf Chasselas, 40 % auf Pinot noir sowie je 5 % auf Chardonnay und Pinot gris. Alle Reben werden unter dem Qualitätslabel Vinatura angebaut, im Einklang mit der Natur, jedoch unter Einsatz der im Weinbau verwendeten modernsten technischen Mittel. Die Parzellen befinden sich an Hanglagen von 10 bis 30 % Neigung, um ein Maximum von der Sonneneinstrahlung zu profitieren. Die für die Region klassischen roten Böden sind sandig-kalkig. Jede Rebe besitzt ihre eigene Persönlichkeit, und die verschie-denen Terroirs verleihen jedem unserer Weine Komplexität. Der Keller: Unser in kalkhaltigem Muttergestein gebaute Keller ist ausgerüstet mit Stahltanks und Eichenholzfässern, die für den Ausbau der Rotweine Verwendung finden, sowie Barriques, in denen unseren süssen Farandole und den Chardonnay. Obwohl wir moderne Vinifikationsmethoden anwenden, respektieren wir sowohl Traditionen als auch die Rebsorte. Dank einer sanften Pressung, genausten Temperaturkontrollen während der Gärung, systematischer Überwachung sowie rigorosen hygienischen Bedingungen sind wir in der Lage, Weine von anerkannt guter Qualität anzubieten. Wir geben unsere ganze Liebe und unser Know-how in die Erzeugung unserer Weine. Vineyards: Located around the neighbouring villages of Cressier and Le Landeron, at an altitude of 430m (1,420ft), our Domain’s vineyards cover an area of 6ha (15 acres) with an additional 3 ha (7.5 acres) tended by other local winegrowers. Chasselas covers about 50 % of the total planted area, Pinot noir 40 %, Chardonnay 5 % and the Pinot gris 5%. All of our vines are cultivated in strict accordance to the requirements of the quality «Vinatura» label. This ensures that we carefully respect the environment whilst using the most modern winegrowing techniques. The vineyards are on a slope of 10-30 %, in order to capture the maximum amount of sunlight. The soils of the region are typically red, sandy and calcareous. Each grape variety has its own personality, and the nuances from the different micro-environmental conditions found on our Domain gives a complexity to every one of our wines. Cellar: Dug into limestone bedrock, our cellar contains steel vats, oak tuns (for making red wines), and wooden casks (barriques) for our sweet wine, Farandole and our Chardonnay barrique. Our winemaking techniques are modern whilst at the same time respect both tradition and the grape variety. Gentle pressing, strict control of the temperature during fermentation, methodical monitoring and scrupulous hygiene enables us to offer wines of recognised quality. We put all our heart and know-how into the development of our wines.
